It's May Day, so we’ve put together a guide to our top spring cocktails for you, fresh concoctions that are ideal for enjoying in the garden. 

 1. Halcyon Spritz

‘Halcyon’ means calm and peaceful, and this beautifully clear spritz will certainly make you feel the same this season. The Luxardo Bianco flavour profile enhances the orange bitters adding a twist to this classic Venetian cocktail.

Ingredients

100ml Pale Fox, 25ml Luxardo Bianco, 25ml Soda Water, Dash Orange Bitters

Glass & Garnish

Large Copa Glass filled with ice, Dehydrated orange slice 

Method

Mix Luxardo and orange bitters over heaps of ice, Top with Pale Fox and chilled soda water, Stir, Add Garnish

Pale Fox Prosecco Pale-oma

2. Pale-oma

A take on the classic tequila-based cocktail, the Paloma, we swap out the soda for Pale Fox. The Pale-oma is has a bit of a kick owing to the tartness of the lime and grapefruit juice, but this is balanced out by the sweetness of the agave syrup.

Ingredients

35ml tequila, 10ml agave syrup, 10ml lime juice, 50ml pink grapefruit juice, Pale Fox to top

Glass & Garnish

Highball with ice to top, Half grapefruit wedge & sea salt

Method

Rim glass with grapefruit wedge and dip in salt, Combine ingredients, Add garnish

 Pale Fox Spritz

3. Pale Fox Spritz

Our signature Spritz is crisp and a faultless aperitif after a warm spring day in the garden. The mix of the botanical notes of the elderflower and dry vermouth with the citrus is truly refreshing. 

Ingredients

20ml Dry Vermouth, 20ml Elderflower Cordial, 10ml Lemon Juice, Pale Fox to top

Glass & Garnish

Large Copa Glass filled with ice, Mint, Cucumber

Method

Combine, Add garnish

 Pale Fox Prosecco Raspberry Smash

4. Raspberry Smash

Super simple to make but always impressive to serve to guests. The sweet Chambord is an ideal contrast to the dry prosecco, whilst the muddled raspberries will keep infusing throughout to add more layers of fruitiness. 

Ingredients 

100ml Pale Fox, 15ml Chambord, 10ml Lemon Juice, 5-7 Muddled Raspberries 

Glass & Garnish 

Rocks Glass with cracked ice, Mint and Raspberries

Method

Add all ingredients except Pale Fox, Stir, Top with Pale Fox

 Pale Fox Prosecco Fox Force 75

5. Fox Force 75

The Fox Force 75 is based on an elegant and effervescent staple that does not fall short of its high renown. A simple but strong cocktail to turn to for a celebratory occasion, if you want to move away from straight prosecco.

Ingredients 

25ml Gin, 15ml Lemon Juice, 15ml Simple Syrup, Pale Fox to top

Glass & Garnish

Champagne glass, Lemon Peel

Method

Shake gin lemon and simple syrup, Double strain into glass, Top with Pale Fox, Add garnish
